Cheesy bacon covered potato bites
Ingredients:
1. Package of light cheddar cheese
2. Light Sour cream
3. 6 small red potatoes
4. Green onion
5. Salt and Pepper
6. 4 strips of bacon (more or less depending on preference)

First cook your bacon. Make sure the pieces have a good portion of fat so that the grease will appear in your pan. After bacon is browned and fully cooked take out of the pan and place in a bowl to drain the oil.
Dice your potatoes up into small bite size pieces and throw them into the grease created from the bacon. Fry them up until browned and softened and season with S&P.
Place them on a plate and dab to soak up excess oil. Break up your bacon into bits over the top of the potatoes. Then take your block of cheddar cheese and shred it over the top until the potatoes are covered in a layer of cheese (amount of cheese depends on you!) After that place the dish into the microwave (or oven) to allow the cheese to melt for 30 seconds (or until cheese is melted nicely).
Take out and serve with a spoonful of sour cream on top and a sprinkling of green onion.
