Chocolate and Strawberry Icebox Cookie Cake #recipe #dessert #foodie

This is a desert I’ve been meaning to try. I got the idea from this website. It seemed so simple and I’m a sucker for a no bake desert. So I decided to give it a go with a little twist. They don’t sell graham crackers in australia so I improvised and made it a cookie cake using some digestive cookies :) It turned our really nice and delicious. 

Chocolate&Strawberry Icebox Cookie Cake

  1. 1 pack of Digestive cookies
  2. Thickened Cream
  3. 1 tbsp. Vanilla
  4. Sliced strawberries
  5. White Sugar 
  6. Cooking chocolate (Milk or dark) 

First make your cream. Take a cup of thickened cream and place it in a bowl. Blend until it  stiffens ( Do not over blend). Add vanilla, and 1/3 a cup of sugar and blend again until combined. Spread an even layer of the cream onto a cookie. Place the cookie cream side down onto a plate. Cover dry side
 of the cookie with cream and place thinly sliced strawberries on top. 

Place a cookie on top of this and spread over cream as well. Top with sliced strawberries. Place another cookie on top and repeat the same steps and you have finished your cookie tower. Now to make the chocolate sauce. Take one cup of cream and two cup of chopped chocolate. Place your cream into your saucepan first allowing it to heat until bubbles form around the outer edges. Add the chocolate and allow it to sit for a few minutes. Then stir until it is thick and smooth. Let cool for 10 minutes then drizzle over your cookie tower with a spoon. Place this in the fridge for 4 hours or more. Then serve. Enjoy :)
