Chicken Taquitos and Grilled Spinach-Bacon Pizza and Blog Hop! Updated: 9/10


I’m all for easy and flavorful recipes. Here’s another one for the collection! Chicken Taquitos :) This is soooo simple to make and tastes delicious paired with a bit of sour cream. My partner and I scoffed these down in a matter of minutes. Great appetizers! Or if you make a bunch pair it with spanish rice and pico de gallo for a nice main. I had a few for appetizers. I used regular sized tortilla but if you are going to use them as appetizers I recommend using small tortillas. Unless its for the footy or something then the bigger the better! :) 


For my main I made a delicious spinach and bacon pizza on the grill. My partner and I love spinach pizza and I decided to add bacon at the last minute which crisped up nicely on the grill and made for a lovely pizza. Check it out!


Chicken Taquitos 
  1. Shredded cooked chicken
  2. 2 tablespoon of salsa
  3. 1 tablespoon of sour cream
  4. 1 tablespoon of cream cheese 
  5. Small handful of chopped chives (save a few for garnish)
  6. Small handful of chopped cilantro (coriander) 
  7. Salt and Pepper to taste 
  8. Oil for light frying 


Instructions:

Mix all ingredients in a large bowl. Mix thoroughly until cream cheese is softened and well combined. Season with a bit of S&P to taste. Take out your tortillas. If they are bit stiff and dry wet they with a bit of water. This will help them roll easily into form. Place nice spoonfuls of the mixture on one side of the tortilla. Roll the tortilla up, and place the open flap face down into the oil to seal. Let it fry until golden brown, turning so it cooks evenly. Serve with sour cream, sprinkled with a bit of chopped chives. 


Yum! Here is a picture of my spinach and bacon pizza. I season the base before adding my ingredients with a bit of chicken salt and italian herbs seasoning.





Simply layer Alfredo sauce, red onion, spinach, mushroomschopped bacon, and cheddar cheese. Season with a bit of pepper and grill !

Mount Barney, Flavours Cafe, and the perfect milkshake #review #travel #australia

A few weekends ago we decided to take a spontaneous trip to Mt. Barney. Since we purchased the new car the weekends have been reserved for spontaneous trips- just giving ourselves an excuse to enjoy the new car smell...

We managed to rack up over 3000km in 1 to 2 months :O

It was worth it though we've had so much fun exploring. Mount Barney was a beautiful trip. We took the lovely scenic road through the beautiful farmlands and mountains. I love it out there you feel so close to nature because you are literally driving through farms, haha. I mean literally we had to stop a few times to allow cows to cross the road (they aren't the fastest animals in the world either -.-) One charming house even had the ingenuity to turn their busted microwave into a letterbox :/



Mount Barney is so beautiful and rugged. My partner was telling me he use to camp out there. There is a lot more restrictions around where you can camp than it was say.. ten years ago, but still a really nice trip. Sadly (due to eating habits of our own) we were in no way close to the physical shape you need to be in to climb this mountain, haha. So we passed on that. Very nice leisurely drive though, so I recommend the trip even if you don't plan on getting the hiking boots out. It was such a sunny, nice day we decided to stop at a cafe for a bit of lunch and a nice milkshake.

I'm very picky when it comes to milkshakes. I'm a bit of a milkshake critic so believe me when I say this.... FLAVOURS CAFE HAS THE BEST MILKSHAKES! I've tried a few milkshakes since Ive been in Australia from a host of different places and none have came up to par until now.

A perfect milk shake is not too runny, but also not compacted so much that you can't suck it through a straw. It needs that perfect balance and then a strong non-artificial tasting flavour. The strawberry milkshake at Flavours Cafe does it for me!








The food was okay too. Snacky-little-thickly battered bites of food are what the lunch menu consisted of. If you just want a little snack to tide you over while you explore this is a good pitstop. Very cutely themed inside, a real country place. If nothing else please go for the milkshakes!!! My partner assures me they make a mean coffee as well. I'm not a coffee person so I'll take his word for it :)

My blog is about what I love to do in my free time, COOKING. It became
my favorite hobby about two years ago when I moved out of the house
and realized I loved spending hours just preparing meals. I was
especially proud of myself when my family and friends loved the food I
would make. I had no prior experience, I just learned from watching tv
and the internet was extremely useful. I enjoy looking at recipes and
If I have to be honest..I never followed one recipe step by step
exactly as written. I always do it my way, I'm sure many people who
are into cooking have it the same way. By the way, I'm a Jersey girl
and I'm currently in medical school. People always ask me how I have
time to cook. Well, the only other thing I do besides studying is
cooking. I always have time for food.

The recipe Jagoda will be sharing with us today is her Intense Chocolate Brownie Pie

1. 2 Cups All-Purpose Flour
2. 2 Egg Yolks
3. 2 Egg Whites
4. 2 Sticks of Unsalted Butter
5. 2/3 Cup HERSHEY'S Cocoa Powder
6. 1 Teaspoon Baking Powder
7. 1 Teaspoon Vanilla Sugar
8. 1 Teaspoon Vanilla Extract
9. 1 Cup White Sugar (add 1/2 cup - 1 cup more for sweeter taste)
10. 1 Cup Chopped Almonds (optional, feel free to substitute with walnuts, dried fruit, etc.)
11. 1 Cup Kefir/Milk (optional, used to thin batter)
12. Powdered Sugar












INSTRUCTIONS-

1. Add flour, baking powder, and a pinch of salt to a large bowl. Mix gently.

2. Melt 2 sticks of unsalted butter on non-stick pan and add sugar, vanilla sugar, and cocoa powder. 

3. Mix on very low heat, do NOT burn butter or sugar. Mix until sugar has completely melted. 

4. Set pan aside to cool, and add 2 egg yolks to the flour mixture. Add kefir/milk and mix with mixer.

5. When chocolate has slightly cooled, add the liquid ingredients to the dry ingredients and mix on high.

6. If batter is too thick, add kefir/milk/water mixture. Remember, the batter should NOT be runny. 

7. Whip 2 egg whites with 1/2 cup of sugar until foam has set. 

8. Add foam to the batter and stir it in gently.

9. Preheat oven to about 185C (370F).

10. Add batter to cake pan and spread evenly. Bake for about 30 minutes. Check batter after 25 minutes.

11. Sprinkle powdered sugar on cooled pie. Serve!



*Tips: *I do have to warn you, this pie did not come out very SWEET. I used a decent amount of cocoa powder, and the first thing you can taste is the rich chocolate. If you do not like bitter chocolate, be sure to add at least 2 cups of sugar (see recipe below). I am not a huge fan of very sweet cakes, therefore I do not overly sweeten my food.

My bangin' Burrito Bowls ! :D #food #mexican #recipe


Burrito Bowls: 

Hey everyone! Just a quick blog update, wanted to share our burrito bowl recipe. We will be moving this weekend so the coming few weeks will be busy pretty hectic. I have so many DIY projects I will be starting to decorate the new place! So I might be adding a DIY section.... 


This one is sure to be a favorite of the men in the house. Very simple to make! The secret to burrito bowls is simply layering them with your favorite mexican inspired ingredients. There is no perfect burrito bowl! It just depends on what you want in it. Whether that be black olives, black beans, salsa, or peppers - for those who like it hot- 


Here is my burrito bowl recipe!








Ingredients: 

Picco de Gallo 
  • 1 cup of diced tomatoes
  • 1 lime 
  • 1 cup red onion 
  • 1/2 cilantro (or coriander) 

Mix ingredients together in a bowl. Taste to see if you have used enough lime juice. Depends on your preference. 


Shredded chicken & pork 

Homemade tortilla 

Cooked Rice 

Refried Beans 

Shredded lettuce 

Shredded cheese 

( To make homemade tortilla simple cut flour tortilla into pizza- like slices and fry them in light oil) 

First make an even layer of rice, next spread refried beans on top of rice, then sprinkle the beans with shredded chicken and pork, sprinkle your cheese on top of that

Now microwave your bowl until the cheese is melted on top. Now add the lettuce and picco de gallo. Squeeze a bit more lime juice on top if you wish. Serve!
