Beer & Nachos night

Last night was NACHO NIGHT! These are the 3 ingredients you need in order to have a perfect nacho night:

1. A good movie
2. Beer
3. & a reclining chair

The last isn't an absolute necessity but it helps a lot. We are beer connoisseurs. We brew our own beer! I have been doing it for a year now but my partner has been doing it for much longer. It so simple and cheaper than buying a carton every few weeks. Pop down to your local WoolWorths (or whatever your  major supermarket is) and get a brewing kit! Its really simple. The most expensive thing to buy is your equipment but when you think about how much money you will be saving in the long run its worth it. After that the only things you will need to purchase are your ingredients and they might run you max. 20 bucks.

Anyhow,  back to nacho night...

Here's the recipe for my quick&dirty nachos!

Ingredients:
1. Pork Mince
2. Red Kidney Beans
3. 1 and 1/2 cups of Shredded Cheddar Cheese
4. Chopped Green Chili Pepper
5. 1 tsp of Chili Powder
6. 1tbsp of Cajun Seasoning
7. 1tbsp of Cumin
8. 1tbsp of Chicken Salt
9. 1/2 tbsp of Salt
10. Pepper to taste
11. Avocado diced
12. Sour Cream
13. Green onion to garnish
14. 1/2 cup chopped red onion
15. 1tbsp of Oil

Directions:
Place your oil into a skillet, and work it around until the base of the skillet is covered in a light layer of oil. Place your mince in and season it with your Chili Powder, Cajun, Cumin, Chicken Salt, Salt, & Pepper. When it is halfway cooked add your green chili peppers. Allow the mince to cook all the way through. If there is any excess liquid, drain it from your skillet. Next add your Red Kidney Beans. Then add your shredded cheese and red onion. Take a spoon and stir the mixture around in your skillet until the cheese is melted. Take your nacho chips and place them on a plate. Take your mince mixture and spoon it over the top of your nachos. Add your diced avocado over the top, a nice spoonful of sour cream, and sprinkle with green onion. Enjoy!
