If you've been keeping up with our adventures you know back in December we took a road trip to Sydney! Sydney is without question one of our favorite cities in Australia. Beautiful beaches...great people...and AMAZING food. If you haven't been to this stunning part of the world I hope these pictures of our trip will convince you to add it to the bucket list! Without further ado here are a few of our favorite snaps from our Sydney road trip.

We had to get out of the car and check out Sawtell Beach! It's breathtaking. It was worth the extra hour it added to the drive ;)

What a lovely view from the lighthouse!

Ran into a cheeky kangaroo while climbing a very steep hill to get to the lighthouse.

Beautiful coastline in Wollongong...

Delicious Cinnamon Rolls in a Coffee Glaze

Is their anything better than the smell of cinnamon and freshly brewed coffee wafting  through the house in the morning? I think not.

Cinnamon is amazing and very under appreciated. It's one of my favorite spices! It can be a challenge finding desserts Darrell likes...he isn't a big sweets fan but luckily I know his weakness....

Coffee! He adores anything coffee flavored. As you know I'm not a big coffee fan but I actually don't mind it in desserts... It gives it a nice kick. Desserts using coffee can double as an after dinner treat or even a light breakfast.

We are usually in a rush in the morning so most days Darrell doesn't get to enjoy much of anything for breakfast... if you are having the same problem then cinnamon rolls in a coffee glaze are the perfect solution!

I made these the night before and served them up for breakfast this morning. Delicious! Here's the recipe:

1. 2 3/4 cups of flour
2. 1 tsp salt
3. 3 tablespoons of sugar
4. 1 packet of yeast
5. 1/2 cup of water
6. 1/4 cup of milk
7. 3 tablespoons of sugar
8. 2 1/2 tbsp of butter
9. 1 large egg

1.  2 tbsp of melted butter
2.  2 tbsp of cinnamon
3. 1/4 cup of sugar

*Add more (or less) cinnamon as desired

1. 1/2 cup of strong coffee
2. 1 1/2 cup of icing mixture (or icing sugar)
3. 1 tsp of vanilla essence

*Add more (or less) icing sugar as desired

Make your dough.  In a large bowl combine 2 cups of flour, sugar, salt, and yeast. Mix well.  In a medium size bowl combine milk, butter, and water. Heat in a microwave for 30 seconds or until the bowl is warm to touch. Stir the milk mixture into the flour mixture. Add the egg and gradually add the leftover flour until the dough begins to take shape.  Place your dough on a lightly floured surface and knead for a few minutes. Place the dough in a greased bowl and allow to rest for 10-20 minutes.

Roll your dough out into a large rectangle. Brush it lightly with the melted butter. Sprinkle the cinnamon and sugar over the dough. Roll the dough up tightly. Using a sharp knife cut the dough into pieces.

Place the pieces into a greased round baking dish. Preheat the oven to 400 degrees F (200 degrees C) and cook for 30-45 minutes (or until golden brown). Make your glaze. Feel free to add more or less icing sugar until you get a nice smooth texture. Drizzle glaze over rolls and serve.

Quick bites:Seafood Lovers Cafe in Margate

We've been to Seafood Lover's Cafe many many times...and I have no idea why I haven't posted about it before!

Let me rectify this situation...

Seafood Lover's Cafe is our GO TO place for fish and chips. The food is beautiful AND it's located across from one of the cutest beaches in Margate. We love it! If you are hungry couple looking for a nice lunch try the "2 pack". It's more than enough to fill two people. They aren't shy with the chips at Seafood Lover's! You get your money's worth in food.

The "2 pack" comes with 2 decent size fish fillets, 4 calamari rings, hot chips, tartare, & lemon.  They also offer a nice variety of desserts for those who have a sweet tooth.

Grab a pack and head to the beach! It's the perfect way to spend the weekend.

Little Saigon Grill on Albert, Brisbane CBD

Authentic Vietnamese street food is now available in Brisbane's CBD! This weekend we were invited to an intimate launch event for Little Saigon Grill in a new lane way under the Rio Tinto building. You may recognize the name- Little Saigon Grill was a popular lunch spot in Rowes Arcade. Well they are back and better than ever!

The food was incredibly fresh and delicious. Little Saigon Grill is the perfect lunch retreat. Bring a group of your closest friends, gather around one of their tables, and dig in! That's exactly what we did. The food is great for sharing! We tried so many great dishes at Little Saigon Grill- here are a few of our favorites...

Who doesn't enjoy a crispy Vietnamese pancake? You can imagine the huge smiles on our faces when these beautiful pancakes came out. They were accompanied by a basket of fresh vegetables and herbs.

We wrapped the pancake in lettuce for an extra crunch. Delicious! The pancake options available at Little Saigon Grill are: prawn and pork (traditional) (GF) & prawn and duck.

Another one of our favorite dishes from our lunch time feast was the grilled lemon grass pork chop. Mouthwatering flavor- we really enjoyed these juicy pieces of grilled pork.

The rice paper rolls at Little Saigon Grill are some of the best we have EVER had! Stuffed full of juicy meat and fresh ingredients. Yum- you have to try these!

The Vietnamese chicken curry served with sweet potato was so so good! Juicy tender chunks of chicken in this sweet & savory sauce. The Vietnamese chicken curry is also accompanied with steamed rice. Great to mop up this beautiful curry sauce. You won't want to leave a drop!

We simply can't forget the slow braised pork belly in coconut juice with boiled egg. The pork belly literally melted in your mouth - it was so tender! The boiled egg created a beautiful velvety sauce when broken up. It tasted heavenly with the pork belly. Just thinking about this dish is making me hungry!

We had an awesome time at Little Saigon Grill! The owner Thanh was so friendly and passionate. That passion resonated in the food. Darrell loves Vietnamese food and was very happy such a great place was only a few metres from his work. They've definitely gained a lunch time regular! If you haven't checked out this gem we recommend that you do!

Chinese New Year: Peng You Kitchen & Bar Official Lauch Party

Peng You Kitchen & Bar is a new restaurant located in Gasworks Plaza. The Gasworks is shaping up to be a dining hot spot here in Brisbane! So when we were invited to attend the launch party of Peng You Kitchen & Bar we were very excited! The launch party/Chinese New Year celebration sounded like the perfect introduction to this new precinct!

"Peng-You" means "friends" which turned out to be very fitting for our night. We met new friends...shared a few drinks...and devoured some delicious bites.  It was a beautiful night! We loved the decor in Peng You. It was very cool, elegant, and relaxed. The beautiful lanterns that dangled from the ceiling casted a golden glow over the room. Great mood lighting! Perfect place to have a few drinks and nibbles with your friends after work.

The staff were very nice. Darrell even made friends with the chef who was quite the character- had us laughing most of the night!

The chef (really cool guy) !

The Dragon dance was a highlight! Dragon dances are performed during the Chinese New Year and are said to bring good luck to people. The longer the dance the more luck you will have!

The chef was nice enough to make Darrell a plate to nibble on while he was taking photos of them in action! The tofu wrapped prawns were mouthwatering.

Quick snaps of some of the lovely servers and the delicious spread. Where to begin.... ;)

Freshly made rice paper rolls, man tou, and crab claws.

The chef preparing to serve the hungry guests.

Yummy fish balls and gyoza (our favorite)!

We had an awesome time celebrating the Chinese New Year with Peng You Kitchen & Bar. Thank you to the team for a memorable night. If you haven't checked out Peng You Kitchen & Bar we recommend that you do. You won't be disappointed!
