MeatCart Recipes: Grilled Lamb with Herb Butter and Garlic Potato Bites

We absolutely love cooking so we were very excited when we were approached by MeatCart to sample some of their delicious products. MeatCart is a new online butcher which delivers to Brisbane, Gold Coast & the Sunshine Coast! You might be a bit hesitant ordering meat online and having it delivered. I'll admit we didn't know what to expect. We'd never purchased meat online either.

Now that we have experienced it first hand let me assure you there is nothing to fear! MeatCart supplies HIGH quality 100% Aussie beef, pork, lamb, chicken, and seafood. The meat was packaged nicely in a yellow MeatCart freezer bag. When I took the meat out of the bag it was icy cold as if it had just come out of the freezer!

We dug into the lamb steaks first and came up with this super quick, and incredibly delicious meal. Check it out:

Grilled Lamb with Herb Butter and Garlic Potato Bites

Grilled Lamb
1. Salt & Pepper
*That's all you need. The meat is so beautiful already- no need to mess with a good thing! 
Herb Butter
1. Butter
2. Herbs (chives, parsley, etc)
Garlic Potato Bites
1. 4 medium size potatoes, peeled & boiled until tender
2. butter
3. 4 cloves of garlic, crushed
4. Panko bread crumbs
5. flour
6. 1 large egg, lightly beaten


Prepare your herb butter. In a medium bowl combine your butter and herbs. Mix until well combined. Place mixture on a piece of cling wrap. Roll the cling wrap up like a sushi roll. Secure the ends with twist ties. Place in the fridge for up to 30 minutes to allow the butter to set.

Next prepare your garlic potato bites. Drain the boiled potatoes. Add butter and crushed garlic and mash (Amt. of butter depends on your preference- I like mine really really buttery). Place flour in a small bowl. Place beaten egg in another small bowl, and your breadcrumbs in a separate bowl.  Scoop out a table spoon of the mashed potatoes and form a small ball in your hand. Roll the ball in the flour, then roll the ball in the egg. Finally, roll the ball in the breadcrumbs. Fry the ball in light oil until golden brown. Repeat these steps.

The lamb is very simple. I used my George Foreman to get the nice grill marks you see pictured above. Season the meat with a bit of S&P. Spray your grill with a bit of canola oil. Place meat on the grill, flipping once until meat is cooked to your liking. Serve with steamed green beans and enjoy!
